Tartar with potato chips

Serves 4:

  • 400 grams SALMA
  • 1 red onion
  • 1 tablespoon capers
  • 1 ½ tablespoons chives
  • 4 teaspoons grated parmesan
  • 1 tablespoon Dijon mustard
  • 6 tablespoons high-quality olive oil
  • 1 lemon
  • Salted potato chips
  • Salt and pepper

Directions:

  1. Slice SALMA into small cubes, about 0.5 x 0.5 centimetres.
  2. Mix SALMA cubes with finely chopped red onion, capers, finely chopped chives, grated parmesan, mustard and olive oil just before serving. Add salt, pepper and lemon juice to taste.
  3. Place the tartar in a glasses or bowls and top with potato chips.
